Paleo Challenge {Week 1: Day 2}

What a breeze today was!  With food, that is – it was not an easy day otherwise, but we had a great plan for all meals plus snacks.  This morning we started with Machaca Con Huevos–scrambled eggs with shredded beef and red bell pepper–topped with a dollop of salsa.  A mid morning snack of cherries held us over until lunch, which was leftover Pollo Asado over a nice green salad and a side of leftover fajita veggies.  Other snacks were celery sticks and cashew butter, banana bread muffins, and Larabars.  I did overload snack choices today and a couple didn’t get eaten, but they were all very healthy choices. We ended the night with a late dinner of pot roast, sautéed mushrooms and zucchini, and a green salad.  Breakfast, snacks, and lunches are planned and packed for tomorrow, so I’d say it was a very productive day!  Hope this gives you good ideas for Paleo meals if you’ve decided to try this out as well.  Goodnight and happy eating!     This breakfast looks delicious. My brother was on the paleo diet for quite a while and seemed to really benefit from it. Not sure why he stopped. Are you using one particular recipe book or are you grabbing various paleo recipes from the web? I've started doing a little research on the best "Clean" eating recipe books available. I want to start cooking more clean but am the type of person that definitely needs a cookbook to follow. Do you have any recommendations for good recipe books for Clean meals? Or any Paleo recipe books you like?

    Hi Monica! For most of these meals, I'm just winging it with family recipes that I've adapted a little. If you want to start out eating real foods, check out Super Natural Every Day by Heidi Swanson. I found it at the local library and copied some of my favorite recipes. The website http://www.100daysofrealfood.com is also a great place to start. I got my Larabars recipe here and found lots of other great resources. I recommend starting off with real foods and cutting out the processed junk, then if you're feeling brave, try Paleo. Hope that helps!
